There is nothing more Southern than pecan pie and people have been fighting for centuries on what ingredients make it best. Ours has decadent corn syrup and roasted pecans, with just a little hint of bourbon for kick.
Chess pie is an old and quintessential Southern pie.made from basic ingredients any farm cook would have on hand. Versions abound today. Ours has the tang of lemon and buttermilk. It's Ethel Ann's absolute favorite.
How do you improve on this old standby? We say take the best apples, macerate them in lemon juice, sugar and bourbon. Take that juice and heat to a syrup and then pour it back on. Time to bake.
